Plume - Organic Dong Ding Oolong - Nantou, Taiwan 1 oz.
We first visited this MOA certified organic farm in August 2016, and were struck by the biodiversity of the area. The tea garden has wild geese and ducks walking around (and fertilizing) the tea trees, indicating a healthy insect population, which also means that the trees are chemical free. All the local flora and fauna is thriving, with various birds, snakes, and flowering bushes everywhere. Mr. Xian, the owner, takes great pride in his relationship to the trees and was happy to share this stunning Spring harvest Dong Ding Oolong with us. Plume is smooth, clean, and hydrating with fresh floral qualities and lingering sweetness (Hui Gan). The tea is full-bodied and mouthfilling. The aroma is rich and uplifting, with a Qi that is gently opening without being stimulating. We particularly love this refreshing, cleansing tea on hotter days. After Yencha, Dong Ding is our favorite Oolong, but don't tell nobody.
Dong Ding is typically picked, withered, tossed in bamboo baskets to initiate oxidation, tumble heated, then rolled into little balls characteristic of many Taiwanese oolongs. The final step, and the one that gives Dong Ding its unique flavor, is the slow roasting of the tea leaves over charcoal, setting the oxidation level at 25 to 35%.
